Tomich Hill Wine Dinner, Story Bridge Hotel

Người đăng: Unknown vào lúc 14:50
A kind invitation from Andrew Ford of the Story Bridge Hotel saw K2 and I enjoy a dinner in their upstairs dining room featuring Tomich Wines recently.

Tomich Wines is family owned and operated winery north of the Adelaide Hills township of Woodside in South Australia.

The region promotes a long and slow ripening and the Tomich wines have the elegant, vibrant and fresh varietal flavours for which the Adelaide Hills are renowned.

The vines are grown over 27 individual blocks on their 320 acre property. Each block is planted with vines that reflect the terrior with the aim of producing pure fruit flavours that are both complex and delicate in nature. Winemaker John Randell shared the story of each wine with passion.

Story Bridge Executive Chef Jason Walker prepared an interesting selection of dishes starting with avocado mousseline cones with spanner crab, creme fraiche and citrus flying fish roe; rare beef en croute with horseradish creme and truffle caviar and twice baked goats cheese souffles. The wine match was the Tomich Hill Reserve Sparking Pinot Chardonnay.

Next came delicious seared Moreton Bay tiger prawns with truffle potato, shellfish reduction and deep fried leeks matched with the 2009 Tomich Hill Sauginon Blanc and the 2009 Tomich Hill Pinot Grigio.

Peppered venison loin with beetroot and Milawa goat curd pate, buttered frizee and red currant glaze was matched with the 2006 and 2008 Tomich Hill Pinot Noir.

Char grilled waygu beef with cepe mushroom creme caramel, purple carrots, fried enoki croutes, baby spinach and red wine glaze was matched with a 2009 Tomich Hill Syrah.  The purple carrots are grown in the Blue Mountains and are naturally purple. Their colour can only be retained through careful cooking.

The finale was a French buttered brioche with fresh Queensland berries, an unusual pepita praline and honey sabayon matched with a delicious 209 Tomich Hill Late Harvest Gewurztraminer.

James Halliday gave the winery four stars in the Australian Wine Companion 2010.
