It all started with the festival launch on Thursday night, a cocktail party at Zeta's Bar in the Hilton where Festival Director Joanna Savill launched the festival.
The room was packed full of celebrity chefs both Australian and international. Think Mark Best, Frank Camorra, David Lebovitz, Matt Moran, Magus Nilsson, Neil Perry, David Tanis and Ryan Clift. They were all invited guests for the World Chef Showcase program held over Saturday and Sunday at the Hilton.
The program was spilt into two sessions with each session broken into three segments. It was a wonderful experience to listen and learn as Alex Herbert from Bird Cow Fish explained how to brine meat and Mark Best showed the under ripe raspberries and blueberries he uses to make his signature dishes.

Amongst my personal faves were sessions by blogger and baker David Lebovitz who shared a recipe for the ultimate chocolate cake accompanied by candied peanuts and David Tanis and Jill Norman discussing the influence of the legendary Elizabeth David from personal experience.
