It's a favourite of many including our PM when he is in his Brisbane digs - not very often now days I suspect.
The search is on again to find the best fish and chips in the country. The competition runs from March 1 to April 30 so you've got plenty of time to search out some new favourites. Fish fillets or steak
Use within one day. Take out of the bag then place on a plate or tray. Wrap the plate in glad wrap and place in the coldest part of your fridge.
All whole fish
Use within three days or freeze up to three months. Take out of the bag and submerge in a container. Cover the whole fish with ice and place in fridge for up to three days. You can freeze the fish if it is completely covered and airtight.
Prawns - cooked and raw
Use within two days. Take out of the bag and place in a clear container or bowl with ice. Cover the bowl with a clean, damp tea towel that has been rinsed with cold water. Always ensure that the prawns have been covered. Never mix cooked and green (raw) prawns.
Crabs, bugs and any other shellfish or crustaceans
Use within three days. Take out of the bag and place in a clear container or bowl head down and cover with ice. Place a cold, damp tea towel over the product.
Top tips
- Do not refreeze any thawed fillets or prawns as you lose flavour and freshness.
- If you are not taking seafood directly home, take an esky and ice pack to keep it cool
- Don't defrost frozen seafood at room temperature - use a fridge or microwave.
